Sangue di Giuda sweet
The grapes
This is a grape blend made up of 60% Croatina, 25% Barbera and 15% Rara Grape
cultivated “a guyout” in our vineyards and harvested at the end of September.
Winemaking
Red wine made by removing the stalks and crushing the grapes.
The must obtained, with skins and pips, is put to ferment in tanks at a low
temperature (15-16°C) for about 3/4 days. It is drained and kept in cooled tanks at a
low temperature until it is ready to be used.
Bottling
After refermentation in the autoclave, the wine is microfiltered and bottled
immediately.
Organoleptic characteristics
In the glass it is sparkling a deep ruby red colour with violet highlights, bright, fairly
sticky. To the nose it is fine and penetrating. There is a clear aroma of fresh fruit and
delicate flowers.
On the palate it is sweet, has a good body, it is very balanced and lingering.
Accompaniments
It accompanies fruit tarts and other dry pastries and it is excellent with strawberries.
Technical notes
The wine has an effective alcohol content of 6.5 % vol and a sugar residue of 120-150
g/l. It should be served in balloon-type burgundy glasses at a temperature of 10-12°C.
Bottles should be stored horizontally away from light and in a very cool place
(refrigerated if possible). As it is a sweet wine it should be drunk within the year.
